Ayam masak merah – my version


Lama tak blog on recipe. I want to.. but lately tak kesampaian..macam la terer sangat. lolssss

so, since @aznahahmad asked on Instagram, i guess i’ll share the recipe here..secret recipe ahaks… its just ayam masak merah, but to me, i always feels like mine is different, ingredients and taste is different too. I have always feels like this is my specialty. Ever.

Ayam Masak Merah – Zura’s version
(You may use this for half a chicken, however usually i dont really measure, agak agak seronok jer)
Items to blend:

3 bawang besar

7 ulas bawang putih

1 serai

2 inci halia

Cili kering – up to your taste. For this i use 8-10

Tumis semua ni dalam kuali dengan minyak yg panas. jangan sikit sangat minyak, susah bahan nak garing.

In the other pan, fry your chicken, lightly cooked, jangan garing. Oh ya. ayam tu garam kunyitkan dulu la macam biasa.

 

Yang paling penting, tumis ni kena betul betul masak, naik bau dan pecah minyak. Yes, this take A LOT of time. Yesterday, it took me 2 hours to get really cooked (maybe juga berselang selai ngan sambil layan anak, but yes, memang lama la) Nak masak cepat and hilang rasa pahit masukkan air, kering masuk air lagi. Ni untuk bagi dia masak and pecah minyak.

Bila dah nampak cantik, cili dan bawang dah garing (kalau dirasa tiada rasa pahit) masuk sos tomato sikit, gula dan garam.

Then masuk ayam, biarkan goreng lagi, and mesra dengan bahan tumis tu. Masuk my fav secret ingredient! Daun Kunyit! Racik atau koyakkan je naturally..this is the secret weapon. It brings up the taste, hm yummeh lapar plak i….

Then, also a secret method, masukkan pati santan, sket je.. or secukup rasanya lah. I use satu senduk kecik. And add up water, and leave it another while. The dish akan naik bau, pecah minyak, nampak kuah jadik cantik. Wallllaaaahhh bila rupa dah cun, its done.

It does take a while to prepare, but rasanya sedapppp. I used to eat this with nasi minyak, or nasi putih panas, or ketupat!

This has been my raya lauk masa kat Kuantan dulu. hmmmm Yup sounded like angkut bakul je..tapi alhamdulilllaaahhh sedap
